I’m going to start with my “Fast” Sourdough Bread recipe and then move into my family’s favorite 🙂

FAST SOURDOUGH BREAD:

1 cup sourdough starter

2 1/2 tsp yeast

1 1/2 cups warm water

1/2 tsp. salt

6 cups organic bread flour

2 Tb. sugar

1/2 tsp. baking soda

1 egg white mixed with 2 Tb. water

Proof your yeast in the 1 & 1/2 cups of warm water (not too hot or you will kill your yeast) – then pour your sourdough starter into a large mixing bowl, add the yeast/water mixture, add 4 cups of flour, sugar and salt. Mix well. Place in a buttered bowl and turn to coat all sides of the dough ball. Let rise in a slightly warm place until doubled in size. Mix baking soda into 1 cup of the remaining flour. When your dough has risen, punch it down and add the flour/soda mixture. Put it out onto a floured bread board with the remaining flour and knead until smooth. Divide into two loaves. (I hand shape mine into round loaves but you can use loaf pans.) Let rise for 30 mins, brush tops with egg white mixture, cut slits in the tops of the loaves,  and then bake at 400 degrees for 35-45 mins depending on loaf shape/size. The loaves should have a good hollow sounding thump when they are done 😉
